Watermelon season is fast approaching and this is a salad that will be a summertime favorite in your home this season.  I first made this for the Memorial Day pool kick off last year and was asked to bring it to all picnics we were invited to all summer long.  I think you’re going to agree this will become a family summer favorite.

Watermelon Salad with Feta Cheese

½ cup olive oil

1 jalapeno pepper thinly sliced  Remove the seeds and membrane, with gloves!!

1 TBSP fresh lime juice

1 TBSP Champagne vinegar

½ Tsp of fresh thyme or fresh mint

¼ Tsp kosher salt

1 Seedless Watermelon cut into 3” squares 1” thick

8 oz block of Feta Cheese cut into 3” squares ¼” thick

Combine olive oil, ½ of the sliced jalapeno, lime juice, vinegar and salt in a jar with a tightly closed lid.  Shake vigorously for 2 minutes and set aside.  Start layering one slice of watermelon topped with one layer of Feta, drizzle with the dressing, repeat layering and dressing until each plate has approximately 3-4 slices of watermelon and Feta.  Garnish the salad with either the thyme or mint and if you want to spice it up the rest of the jalapeno.  Your left- over dressing can be stored up to 10 days.  Leaving the jalapeno in the dressing makes it even more spicy.
