Since spring is here and it is starting to warm up and people are utilizing their outdoor spaces more frequently now. I have created one of the best burgers the husband has ever had (so he says). You will enjoy this slightly spicy burger all summer long. Bon Appetite
Smokey Chipotle Burger:
1 ½ lbs of ground beef or 4 patties of Beyond Beef or veggie burger
½ cup mayonnaise(I like Vegannaise as it doesn’t have eggs that can spoil in the heat of summer)
1 ½ TBSP Dijon mustard
1-2 TBSP Chipotle Salsa You can find this in the Hispanic isle at any grocery store. It comes in an 7.76 oz can
1 cup of cooked bacon bits
2 tsp smoked paprika
1 large red onion sliced thick enough for grilling
1 firm avocado
Lettuce and cilantro sprigs
Extra virgin olive oil for brushing on the onion and avocado
1 tsp salt
4 Brioche hamburger buns grilled slightly before serving approximately 2 minutes
In a blender or food processer add mayo, mustard and 1 TBSP Chipotle pepper salsa. Blend until smooth and then add the bacon bits. Put aside in a small bowl. Gently mix your ground beef with 1 TBSP Chipotle salsa (or less if you don’t want it spicy) paprika, salt and make into 4 patties. If you are using the Beyond Beef or Veggie burger you can brush them lightly with the Chipotle salsa. Brush your onion and avocado with the olive oil. Grill onions on the lower grill, each side for 2-3 minutes and grill your avocado on the top rack of the grill for 2-3 minutes per side. Set the grilled onion and avocado aside on a plate with the lettuce and cilantro sprigs. Grill your burger, Beyond Beef or veggie burgers to your desired temperature. 160 degrees is recommended for internal beef temperature, 5-6 minutes per side. Put your Chipotle mayonnaise combination on the bun and add your lettuce, avocado, onion slices and cilantro sprigs and top with your grilled meat.
